Hello. I am currently working on a Japanese to English translation assignment that is due by 5 am, January 19th, 2018.
The original Japanese text contains some Japanese names expressed in "[last name]さん" form.
I cannot decide whether to address each person as Mr. or Mrs, and am tempted to translate them simply as "[last name]-san" (e.g. 山田さん to Yamada-san).
Will this be acceptable?

It's not ideal. Have you asked the customer directly?
