For May, we want to explore some cuisines. One of our colleagues, Mariko, shared in the newsletter that her latest food obsession is Mediterranean and Vietnamese.
Mediterranean cuisine is very diverse due to the influence of different cultures and regions, but is popularly known for foods such as hummus, pita, and olive oil. On the other hand, Vietnamese is more focused on simplicity, but there are also subtle variations per region.
Popular Middle Eastern "fast food" known as falafel is created by combining chickpeas (or fava beans), fresh herbs, and spices to make little patties or balls. Pho, a straightforward staple made of fresh rice noodles, a salty broth, a dash of herbs, and either beef or chicken, dominates the local diet. It is widely accessible, affordable, and delicious always.

I wanted to try new foods from different cultures. Hopefully, I can find a decent restaurant in my area or find ingredients to make this at home. It's time to expand our knowledge from Korean to Vietnamese or Mediterranean. Thanks for this topic, CM Team! 💕
